Flammekueche with Fresh Cheese

  • Fresh-Style Fresh Cheese Plain
  • For the dough - 250g of flour
  • For the dough - 130ml of water
  • For the dough - 50ml of oil
  • For the dough - A dash of salt
  • For the topping - 2 or 3 thinly sliced onions
  • For the topping - 2 slices of bacon cut into thin pieces and cooked as lardons
  • For the topping - 6 tablespoons of white cheese
  • For the topping - 2 tablespoons of crème fraîche
  • For the topping - A dash of whole nutmeg
  • For the topping - A dot of sweet butter

Preparation: 60 minutes / Servings: 4

  1. Prepare the dough by mixing the flour, water, oil and salt in a large bowl.
  2. Make a ball and leave it to rest, covered for 1/2h.
  3. During this time, sauté the onions in a skillet, with a good piece of butter but stopping before they change colour and brown the bacon lardons.
  4. In a pan, whip the white cheese with the cream and nutmeg. Season.
  5. Roll the dough out with the rolling pin, and then place on a baking sheet; previously lined with parchment paper.
  6. Prick all over with a fork, and spread out the white cheese-based mixture. 
  7. Then spread out onions and lardons.
  8. Finally, put in the oven at 475°F (250°C), for about 10 minutes.
