Greek Lamb Burgers

  • Fresh-Style Fresh Cheese Plain
  • 300 g of Riviera Plain French-Style Fresh Cheese
  • 6 hamburger buns
  • 900 g of minced lamb
  • 4 cloves of garlic
  • A few fresh cilantro leaves
  • 1 eggplant
  • A few leaves of fresh mint
  • 1 English cucumber
  • 1 lemon

Preparation: 30 minutes / Baking: 20 minutes / Servings: 6

  1. Lamb Meatballs : Mix the minced lamb with the chopped fresh cilantro and garlic.
  2. Eggplant Purée : Cut the eggplant in half lengthwise, without peeling. Season with salt and pepper, and brush eggplant with olive oil and chopped garlic. Then, place the eggplant on a baking sheet, skin on top, and cook in a very hot oven at 400°F, for about 20 minutes, until tender. Remove the cooked eggplant flesh and drain it in a small strainer. When at room temperature, add 50 ml of Nature Riviera white cheese, and season to taste with salt and pepper.
  3. Tzatziki : Finely chop the mint leaves and 3 cloves of garlic, and add them to 250 ml of Nature Riviera white cheese, with juice from half a lemon and the cucumber cut into thin strips. Season with salt and pepper.
  4. Cook the lamb meatballs on the BBQ.
  5. Prepare the burgers with the tzatziki sauce and the eggplant purée, and garnish to taste (tomatoes, black olives, lettuce, cheddar cheese, etc.).
